Bright, fresh and juicy, this wine is lifted in all the right ways! This wine shows red and black fruits, herbs and spice, all leaping from the glass. The palate is light and ethereal, with freshness from acid, a touch of grip from tannins, and a delightfully low impression of alcohol.
Can’t Stop/Won't Stop gained its name on its second “debut” in 2016, after a cease & desist on the term “F.L.X.” brought the recently launched 2015 F.L.X. Cuvee label to a halt. While the label may have been halted, this wine simply Can’t Stop/Won’t Stop.
After hand harvesting, this wine was carefully sorted by hand to obtain pristine fruit, which was partially destemmed (by variety), and fermented in individual lots before basket pressing in aging in our antique puncheons. The wine spent 18 months in barrel, followed another 12 resting in tank before being bottled unfined and unfiltered, and rested for a further year in bottle.
Christopher’s Notes: 2018 was a “challenging” year to say the least. The year started out promising, with some rather pleasant spring weather, but, quickly turned into a seemingly never ending “water event”. I am very thankful that we only worked with our own fruit this year, so, we were able to really control the variables of farming, and despite the challenging year, we managed to harvest beautifully ripe, intence and focused fruit, and the resulting wines have turned out rather exciting. In addition, given the challenges of the vintage, the decision was made to not make any Element or Colloquial wines in this vintage, so, the lots designated for those labels all ended in this wine, making this a particularly fine bottling worthy of it’s name; Can’t Stop/Won’t Stop.
